Decided to skip making the second batch of meringue cookies, and we just made a bigger batch of the first recipe.
Why?
My KitchenAid mixer is too big.
You see, when we first started up our food blog, my aunt gifted us a KitchenAid mixer. Not just any mixer, but the fucking top of the line pro model that uses a 6 quart bowl and cost more than two months of car payments. It is damn near impossible to beat anything less than a dozen egg whites in that machine. There’s just not enough volume in the bottom of the bowl to beat.

Consequently, there’s four sheets of meringues baking/cooling in the oven right now. Once whatever show we’ve got on tv is finished, he’s going to wash out the mixing bowl and I’ll get the pound cake going. While that bakes, we’ll each make our own family cookies. Those don’t need the oven, only the stove top. We get those made, then move on to the other two kinds of cookies. They’ll be done by dinner, just in time for me to use the baking sheets for a shitload of cauliflower, my mushrooms, and a sheet worth of seafood wrapped in buttery pastry dough.
